Meet our Alder-Smoked Chocolate Chip Cookies

The alder cookie is a collaboration between Saint Cupcake owner Jami Curl and Michael Maynard of Beaver Camp Sausage Company, who she met at a Portland Meat Collective class, while stuffing sausage in casings. After learning he had a smoke house, she convinced him to make smoked flour. She knew she wanted to work with some but need the right tools for the job.  Jami gave him the recipe; he made some for her and gave it to her. She said “Ok, thanks!”. It looked like this:

Jami developed a recipe for chocolate chip cookies, specifically using this flour and everyone loved the results! She knew she wanted to keep making these cookies and working with Michael’s unique creation.

Perhaps Jami’s finest baking achievement to date; smoked flour gives the cookie a smokey flavor that’s delicious but not overpowering. Some describe the flavor as bacony, but really it’s just smokey. We use two types of chocolate in this thinner, crisper cookie…

Since perfecting the alder-smoked chocolate chip cookies, Jami has begun to work with more unusual goods from Michael, like his smoked brown sugar (featured in our seasonal pies), smoked butter and smoked coffee beans - both in some secret recipes developing in our test laboratories.

Butterscotch Galore Cookies, what’s your story?

As our online menu explains it, these cookies are oatmeal scotchies taken to a whole new level! They contain Guittard butterscotch chips, rice cereal, oatmeal, coconut & pecans. These are thick & hearty cookies - so so good! But do you know the story behind the cookies? It all started with Gossip Girl.

Once upon a time, Jami would host girl’s nights viewing parties of Gossip Girl. They would eat nachos, drink champagne, and eat dessert. Jami’s friend loved some butterscotch cookies that she would get from a local store, but when that store stopped making those cookies she was distraught. So Jami said, “I bet I can make a butterscotch cookie that’s 2000 times better than those store-bought cookies” and her friend said “Okay, do it!”. Then Jami did come up with a recipe and made a batch the next week. Her friend agreed that, indeed, these cookies were far superior in flavor, texture, and overall good times. She continued to make these cookies week after week, but only for Gossip Girl nights.

Finally, the ladies could eat no more cookies, but they all knew that they were some of the best cookies they’d ever tasted, so Jami brought them to the bakery, and the customers rejoiced. This Butterscotch Galore recipe also led to the creation of the Chocolate Galore cookies, but that’s another story..
