do you remember jackson cafazzo?

last year, his life took a turn that would forever change him. or at least it changed what he did almost every afternoon for a year.

in early december 2007, i had the distinct honor of sending an email to mr. cafazzo to inform him that he had won the drawing for a free cupcake everyday for a year. i waited and waited to hear back and it actually took an APB on our website to get him in here to claim his superspecial cupcake i.d. badge and cupcake privilages. apparently he does not check his email frequently. that just makes him all the cooler to us. jackson entered his name in the drawing around the time of our birthday last year and we couldn’t have randomly picked a better guy. jackson is a cabbie (amongst other things) for a company located just down the street from us, so a cupcake a day was no problem for him redeem.

knowing he was about to embark on a caloric enterprise, jackson joined a gym presumably to head it off at the pass. “the thought of that many cupcakes,” jackson says “made me get a gym membership and I begin working exercise into my daily life again, which proved to be extremely successful. the human body has evolved to strain itself routinely, and our lives are unimaginably cushy compared to what our bodies have evolved for. exercise improves ones demeanor and outlook on life as well as their body. this was a valuable lesson. oh, and that yoga rocks!” along with toning his form, jackson has managed to graduate from PSU, is buying half a cab (though he won’t say which half), and is helping the company to define a greenhouse gas baseline! we don’t know what that is, but jackson, you are awesome! thanks for doing that.

jackson claims he never flashed his cupcake i.d. badge to a cop but is not afraid to, should he get pulled over. the fame and fortune has not gone to his head; jackson has chosen to keep it real, as the kids say. although we will forever be star-struck when we see his smiling face, but we will be proud to say, “yeah, we know him. HI JACKSON!!!!”

oh, and as for his favorite cupcake flavor? simple and classy, just like himself: chocolate with vanilla cream cheese.

november 29, 2005: jami’s dream of opening her very own bakery comes true and saint cupcake happens. the first few months were a dizzying whirl of baking and not sleeping. all alone in the kitchen, jami tried desperately to keep up with the cupcake demands for the good people of portland. now, three years later saint cupcake is still happening, but with lots of help. jami is just about caught up on her sleep now and there are 21 of us making this machine work. we’re having a blast. oh sure, we’ve had our ups (orders of over 1000 cupcakes at a time! near celebrity sitings! great press!) and not so ups (when that jerk broke in and stole a computer and dozens of cupcakes the wee morning hours of our first valentine’s day) but we are happy to be a part of the saint cupcake fam-damily. it’s OUR birthday and we’re going to party like it’s $19.99. we’d like to thank our loyal friends/customers for supporting our little shop and we’d love it if you came to celebrate with us.
